Dark Chocolate Coconut Bliss Bars

  • 2 cups desiccated coconut
  • 2 tablespoons coconut oil, melted*
  • ⅓ cup coconut butter, melted*
  • ½ cup coconut milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 5 ounces dark chocolate, chopped
  • coarse sea salt for sprinkling
  1. Place desiccated coconut, coconut butter, and coconut oil into a bowl of a food processor and process until the mixture resembles breadcrumbs. Add the coconut milk, maple syrup, and vanilla and pulse to combine until the mixture holds together when squeezed between your fingers. Using a tablespoon scoop the mixture and form into balls. Place in the refrigerator to chill for 10 minutes while you prepare the chocolate coating.
  2. Make a double boiler by heating an inch of water in a small saucepan over medium heat and placing a heat-proof bowl over the top. Add the chopped chocolate to the bowl and stir occasionally until the chocolate is smooth and completely melted.
  3. Use two forks to dip each bite into the chocolate. Gently shake to remove excess chocolate. Place on a tray lined with parchment paper and sprinkle with a few flakes of salt. Chill for 15 minutes until chocolate is set.
  4. Store bars in an airtight container in the fridge or freezer.
  5. Notes: To melt the coconut oil and coconut butter place in a heat-proof bowl and microwave for 15-30 seconds.
