Serves: 4-6
  • 1 cup raw cashews, soaked in enough water to cover 6-8 hours
  • ¼ cup cocoa powder
  • 7 Medjool dates, pitted
  • ¼ teaspoon kosher salt
  • 3-4 cups filtered water
  • 1-2 tablespoons maple syrup (optional)
  • Shaved dark chocolate for serving (optional)
  1. Drain and rinse the cashews under cool running water.
  2. Add the cashews, cocoa powder, dates and salt to a high-speed blender and add 2 cups of filtered water.
  3. Blend on high for 1 minute adding more water as needed to reach a desirable consistency.
  4. The more water you add the thinner the milk will be, the milk will thicken slightly as it sits in the refrigerator. Taste and add the maple syrup if you want a sweeter chocolate milk.
  5. To serve, top with shaved dark chocolate if desired.
