sticky date caramel
This sticky date caramel is vegan, paleo and can be made in minutes. For a pourable sauce replace the coconut butter with coconut milk and blend until smooth.
Serves: 2½ cups
  • 2 cups medjool dates, pitted
  • ⅓ cup creamy almond butter
  • 3 tablespoons coconut butter
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ½ teaspoon flaky sea salt (I used Maldon)
  1. If your dates aren't soft and pliable cover with boiling water and let sit for 5-10 minutes. In the bowl of a food processor combine the dates, almond butter, coconut butter, lemon juice, vanilla extract, and salt. Process on high for 1-2 minutes until the mixture is smooth and creamy. Will keep in the refrigerator for a week.
