This summer tropical fruit bowl is loaded with dragonfruit, cantaloupe, blueberries, kiwi and topped off with an easy honey, ginger and lime dressing!
Serves: 2 servings
  • For the dressing:
  • 2 tablespoons honey
  • 2 tablespoons freshly squeezed lime juice
  • ¼ teaspoon freshly grated ginger
  • For the bowl:
  • 1 dragonfruit
  • 1 kiwi, peeled and thinly sliced
  • ½ cantaloupe,
  • 1 cup blueberries
  • ¼ cup toasted coconut
  • ¼ cup fresh mint and basil
  1. In a small bowl combine the honey, lime juice, ginger and stir well to combine. Cut the dragonfruit in half and use a spoon to remove the flesh from the skin. Cut the dragonfruit into 1-inch pieces. Add all the fruit to a large bowl, pour the dressing over the top and stir gently to combine. Serve with a sprinkle of toasted coconut and additional lime wedges.
