Serves: 4 servings
  • 2 sweet yellow onions
  • 2 tablespoons olive oil, divided
  • salt and pepper
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon apple cider vinegar
  • ½ medium green cabbage, cored and very thinly sliced
  • ½ medium red cabbage, cored and very thinly sliced
  • 1 medium avocado
  • ¼ cup toasted pine nuts
  1. Pre-heat the oven to 400 degrees.
  2. Place the onions in a heat proof baking dish, drizzle with one tablespoon of olive oil and season with salt and pepper. Roast the onions for 45 minutes or until they are soft and collapsing slightly. Let cool for 10 minutes. Cut the onions in half and remove the white flesh of the onion and add to a high speed blender. Add the remaining tablespoon of olive oil, the lemon juice, and apple cider vinegar and blend until the mixture is smooth and creamy. Taste and add salt and pepper as desired or a bit more vinegar or lemon juice to balance out the sweetness of the onions.
  3. In a bowl toss the cabbage with the dressing. Add the avocado and pine nuts and mix just to combine.
