Peanut Butter Banana Bread Granola

Serves: 7 to 8 cups
  • 3 cups rolled oats
  • 1 cup crispy rice cereal
  • ½ cup raw sesame seeds
  • ½ cup raw walnuts, coarsely chopped
  • ½ cup raw pecans, coarsely chopped
  • 1 teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • ⅓ cup maple syrup
  • ½ cup peanut butter or almond butter
  • ¼ cup coconut oil, melted
  • 1 medium ripe banana, mashed
  1. Pre-heat the oven to 350 degrees. Line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, stir together the oats, rice cereal, sesame seeds, walnuts, pecans, salt, cinnamon, and cardamom.
  3. In a small bowl, stir the mashed banana, maple syrup, nut butter and coconut oil together until well combined and then pour over the oat mixture and mix well to combine. Pour the mixture onto the prepared tray and spread in an even layer.
  4. Bake for 25-30 minutes until golden brown, stirring once to ensure that it bakes evenly. Let cool completely, the mixture will firm up as it cools. Store in an airtight container at room temperature for 3 to 4 weeks. You can also freeze the granola up to 3 months if desired.
