Spicy chicken peanut soba noodle salad

This spicy chicken peanut soba noodle salad is a great weeknight meal. It uses store bought rotisserie chicken to get dinner on the table in less than 30 minutes!
Serves: 4 servings
  • For the spicy peanut sauce:
  • ¼ cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon freshly grated ginger
  • 1 clove finely chopped garlic
  • 1 tablespoon honey
  • 1 teaspoon Sriracha
  • 1 teaspoon sesame oil
  • 1 tablespoon fresh lime juice
  • 2 tablespoons water
  • For the salad
  • 8 ounces soba noodles
  • 1 cup shredded rotisserie chicken
  • 1 red bell pepper, seeded, and finely sliced
  • 1 carrot, julienned
  • 1 cup snow peas, trimmed and thinly sliced
  • ½ cup roughly chopped cilantro leaves
  • ¼ cup roughly chopped mint leaves
  • ¼ cup chopped roasted peanuts
  1. For the dressing combine all the ingredients in a blender or food processor and process until smooth, adding a little more water if too thick.
  2. Cook the noodles according to directions. Drain well and toss with the chicken, vegetables, herbs and dressing. Garnish with the peanuts and additional herbs if desired. Serve the salad hot or cold.
