Day 22: raw dark chocolate cherry energy bites
Serves: 15
  • 1 cup raw almonds
  • ½ cup cocoa powder
  • ½ cup dried cherries
  • 2 cups dates, pitted (about 10)
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  1. In a food processor, process the almonds until finely chopped but don’t let it turn to almond butter, you still want some texture.
  2. Add the pitted dates, cocoa and salt and process until the mixture is finely chopped and sticks together when you squeeze it between your fingers. Add cherries and process again until well combined.
  3. Using a tablespoon at a time roll the mixture into one-inch balls. Store in the refrigerator for up to 4 days or freeze for up to 3 months. Let them defrost for 20-30 minutes before serving if frozen.
