I spent five hours in my car yesterday chauffeuring my son and a group of pre-teens around the city. When I wasn’t driving, I was sitting in a parking lot. I don’t mind really but there are days when I ask myself how much longer do I have to dedicate most of my free time to taking care of others? I know I only have a few more years when my son will need me and I’m happy to do things that give him pleasure but sometimes I wish I had more time for myself to do the things that make me happy. This blog keeps me busy but at least it’s doing things that I choose and love to do.
Since I’m running around a lot and don’t usually make the time for breakfast I do like to start my morning with a fresh juice. It keeps hunger at bay, gives me enough energy for my workout and sets me up to eat healthier during the rest of the day. Carrot juice is one of my very favorites and I love pairing it with citrus so I thought I’d share one of my favorite blends with you. You can make this in a blender if you don’t have a juicer available, just use one carrot and add 1/2 cup of water or coconut water to thin out the mixture. Alternatively you could use 1 cup of carrot juice and blend it with the grapefruit, orange juice and ginger.
Citrus, carrot, ginger juice
Ingredients:
1 grapefruit, peeled
1 orange, peeled
2 medium carrots, peeled
1/2 inch piece of peeled ginger
1/8 of a fresh lemon, peeled
squeeze of lime juice
Method:
Process all the ingredients through a juicer and stir to combine. Serve chilled or over ice if desired.
Alternatively blend, 1 grapefruit, 1 carrot, 1/2 cup coconut water or water with the ginger and lime in a blender.
Now that it’s warming up a little here I’m starting to juice more again. And carrot juice is my favorite too, but I’ll have to add some orange and grapefruit next time. Great idea!
