With the new year comes the realization that I need to make some changes in my life. I haven’t been feeling all that well physically and I think it’s due to an erratic sleep schedule, too much caffeine and way to much food. Starting today I’m going on a 21 day cleanse to see if I can cut out processed food, caffeine and refined sugar from my diet. I’m not following any particular plan but I’m hoping that I can change some bad habits and feel better in the process. I don’t want to do anything radical, I’m not going to drink salt water or only eat liquids. I have been looking at a lot of plans out there and some of them seem so radical I know that I won’t be able to stick with them. I just want to cook fresh healthy food and restore my body and my mind. Eating more healthfully doesn’t mean that I can’t still share some great recipes with you all. So I hope that you will follow along with me as I start this new journey.
I’ve been trying to get a head start by replacing one of my meals every day with a smoothie in the morning. I was lucky enough to get a Vitamix for Christmas this year and it truly is the most amazing blender on the market. I’ve been playing around with some different flavor combinations and this is one of my favorites. It’s light, bright and utterly refreshing.
If you’ve never tried coconut water it has a lot of health benefits but I haven’t been able to develop a taste for it straight up but I love to add it to my smoothie for added nutrition. It delivers 12 times the electrolytes of most sports drinks, is packed with potassium and has no fat, cholesterol, added sugar and is all natural.
New years resolutions bring out the best intentions in us all but we tend to abandon them as soon as we settle back into our routines. I am hopeful that I will strive to achieve a little success this time around. In the coming year I hope to simplify and streamline my life and focus on gaining experience instead of accumulating possessions. And if I drop a few pounds in the process I won’t be disappointed either. Let’s toast to a happy healthy new year!
Tropical Carrot Herb Smoothie
Serves 1
- 1/2 cup frozen mango chunks
- 1/2 cup frozen pineapple chunks
- 1/2 cup carrot juice
- 1/2 cup coconut water
- a few sprigs of fresh mint or basil
- 1/2 teaspoon freshly squeezed lime juice
- 1 teaspoon honey (optional)
Method:
Combine all the ingredients in a blender and blend until smooth.
