Christmas is just a few days away but there’s still plenty of time to whip up a batch of scrumptious homemade cookies! I thought I’d share our favorite Christmas cookie recipe the peanut butter blossom. And if you are feeling ambitious or just aren’t in the mood for peanut butter I’ve included links to some of my favorite cookie recipes that I’ve posted this year.
I don’t know why but we only make these at Christmas, maybe because they were always part of our family holiday table growing up. They are super simple to make, take only minutes to put together and are the perfect last minute cookie recipe.
Peanut butter blossoms
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1/2 cup butter at room temperature
- 1/2 cup peanut butter
- 1 egg at room temperature
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 cup sugar
- 48 milk chocolate candy kisses, unwrapped
Pre-heat oven to 350 degrees. Combine 1/2 cup sugar, brown sugar, butter and peanut butter in a stand mixer and beat at medium speed until light and fluffy. Add egg, vanilla, and salt and continue to beat until well mixed. Add flour and baking soda. Continue beating just until the mixture comes together and forms a dough. Shape dough a tablespoon at a time into balls. Roll the balls in the 1/4 cup reserved sugar until well coated and place 2 inches apart onto a parchment lined cookie sheet. Bake for 8 to 10 minutes until lightly golden brown. Immediately press 1 chocolate kiss in the center of each cookie. Place back in the oven for 30 seconds just to soften the kiss and then remove and let cool completely.
